Ingredients:

4 slices of tilapia

2 cups cherry tomatoes (sliced in half)

1 cup of chick peas (rinsed and drained)

1 celery stalk (chopped) *optional

bread crumbs (flavored)

1 egg beaten

olive oil

1 clove of garlic (chopped)

sea salt and black pepper

Directions:

Preheat oven 400 degrees.

  1. Dip tilapia in egg and then in bread crumbs.
  2. In a coated ( a drop of olive oil) baking pan, put tilapia slices.
  3. Bake in oven for about 20 minutes.
  4. While tilapia is baking, get a large bowl.
  5. In a large bowl, add tomatoes. chick peas, celery, garlic, 2 tbsp. of olive oil, sprinkle sea salt and black pepper. Mix well.
  6. About 3 minutes before tilapia is done, pour tomato mixture on top of fish and return to oven. Let stay in oven for 3 minutes. Serve hot.

Baked Tilapia With Plum Tomatoes

Ingredients:

4 large slices of tilapia

2 lbs. fresh plum tomatoes (chopped) or 2 (16 oz.) cans of crushed tomatoes

1 small sweet onion (chopped)

3 cloves of garlic (chopped)

3 tbsp. olive oil

1 tsp. sea salt

1 tsp. black pepper

1 tbsp. fresh parsley (chopped)

Directions:

Preheat oven to 350 degrees.

1. In a large skillet, add olive oil, onions and garlic. Let garlic brown for 2 minutes and add fresh plum tomatoes. Add salt and pepper. Stir and cook until tomatoes become soft and saucy. (about 10 minutes) When soft, remove and let cool for a few minutes.

2. Sea salt and black pepper (just a pinch) on each tilapia slice.

3. In a large baking dish, coat the bottom with a little olive oil. Put half the sauce in the bottom of the pan.

4. Place tilapia in baking pan. Pour remaining tomatoes on top and add parsley.

5. Baked in oven for about 18-20 minutes. Tilapia should be white and flaky.

Serve hot.

Pistachio Tilapia

Ingredients:

4 large slices of tilapia

1 1/2 cups of panko bread crumbs

1 cup of pistachio nuts (unsalted and chopped)

1/2 cup of olive oil

salt and pepper

Directions:

Preheat oven to 400 degrees.

1. In a bowl, mix bread crumbs, pistachios, olive oil, and a pinch of salt and pepper. Mix thoroughly.

2. In a large baking pan, put slices of tilapia. Sprinkle salt and pepper on each slice. Put pistachio mixture on top of each slice of tilapia. Coat it well. Cover baking pan with aluminum foil. Cut a few holes in top of the foil. Bake in oven for 15 minutes. Remove foil and bake for an additional 5 minutes.

Serve warm. Serves 4.

 

Bruschetta Tilapia

Ingredients:

4 large slices of tilapia

1 cup tomatoes (chopped)

1 jar of marinated artichoke hearts (chopped) 

1/2 cup red onion (chopped)

1 tbs. olive oil

salt and pepper (pinched)

Directions:

Preheat oven to 350 degrees.

1. Salt and pepper tilapia.

2. In a deep baking dish, brush 1 tbs. of olive oil. Place tilapia in pan.

3. In a bowl, mix tomatoes, artichoke hearts, red onion, olive oil and a pinch of salt and pepper.

4. Place tilapia in oven for 10 minutes. After 10 minutes, remove from oven and spoon tomato mixture on top of each slice.

5. Return to oven for an additional 10 minutes and then serve.

Serve hot.
