Ingredients:

1 (8 oz. can) chick peas (drained)

1 clove of garlic (chopped)

1 lemon (juiced)

2 tsp. tahini

2 tbsp. olive oil

1 qt. cherry tomatoes (cut in half)

1 cup crumbled feta cheese

3 basil leaves (chopped)

sea salt

*extra olive oil

Directions:

  1. In a food processor, put chick peas, garlic, lemon juice, tahini, olive oil and a sprinkle of sea salt. Mix until smooth.
  2. In a bowl, add cherry tomatoes, feta cheese and basil. Sprinkle with a little sea salt and drizzle a little olive oil on top. Mix well.
  3. On a plate put some hummus. Put tomato and feta mixture on top. (see photo)

Kumato’ is a trade name given to a patented cultivar of tomato developed in Spain called ‘Olmeca’. It is grown in Spain, France, Belgium, the Netherlands, Switzerland, Greece, Turkey, The Isle of Wight Canada and Australia by specially selected growers. You can find Kumatos during the summer months at select produce stores.

Ingredients:

12 kumato tomatoes

my melitzanosalata (eggplant) recipe (see link)

Stuff half of the kumatos with hummus and the other half with melitzanosalata .

Serve chilled.

Ingredients:

4 large slices of sole

2 tbsp. olive oil

2 tsp. thyme

1 tsp. sea salt

2 avocados sliced

Directions:

Preheat oven to 350 degrees.

1.  In a large baking pan put 2 tbsp. of olive oil. Sprinkle thyme and sea salt on sole. Bake for about 15-18 minutes.

Serve with sliced avocado and homemade hummus. (recipe below)

Hummus: Recipe:

Ingredients:

1 (16 oz.) can of chick peas (drained)

4 tbsp. fresh lemon juice

2 tbsp. tahini

2 cloves of garlic (chopped)

2 tbsp. olive oil

1/2 tsp. sea salt

Directions:

1. Put all ingredients in a food processor. Pulse slowly. You can add, if needed, another tbsp of olive oil while it is mixing. It should be smooth and creamy.

Serve right after making or refrigerate. Serve with pita bread.

1 (16 oz.) can of chick peas (drained)

4 tbs. fresh lemon juice

2 tbs. tahini

2 cloves of garlic (chopped)

2 tbs. olive oil

1/2 tsp. sea salt

Directions:

1. Put all ingredients in a food processor. Pulse slowly. You can add, if needed, another tbsp. of olive oil while it is mixing. It should be smooth and creamy.

Serve right after making or refrigerate. Serve with pita bread.

*Optional: Sprinkle a 1/4 tsp. of paprika on top.
