Ingredients:

1 lb. chopped beef (made into 4 burgers)

4 slices sharp cheddar cheese

1/2 cup salsa

1/2 cup sour cream

1/2 cup guacamole

Directions:

1. Cook burgers to your desired taste.

2. When burger is almost done, place a slice of cheddar cheese on top.

3. In a bowl, mix sour cream, salsa, and guacamole. Mix it all together.

4. When burger is done, put a dollop of salsa mixture on top.

*Serving with fries is optional.

Guacamole Fried Egg Pitas

Ingredients:

4 whole wheat pita breads

guacamole (my recipe link below)

4 eggs

2 tbsp. butter

sea salt and black pepper

Directions:

  2. Warm pita breads in oven until they’re a little crunchy.
  3. In a skillet, melt butter. Add eggs to fry. Sprinkle sea salt and black pepper.
  4. Spread guacamole on each pita bread and place a fried egg on top.

Set it up and let everyone help themselves.

Ingredients:
6 tortilla shells
6 chicken cutlets (grilled and cut into bite size pieces)
1/2 lb. shrimp (tails removed and boiled)
2 cups salsa
2 cups shredded cheddar cheese
2 cups sour cream
1 head of iceberg lettuce (shredded)
2 cups cherry tomatoes
Directions:
1. Fill each shell with lettuce and top with fillings of your choice.
Optional/Suggestions: red onions, guacamole, chick peas, black beans, sliced beef

Chicken Guacamole

Ingredients:

4 large skinless /boneless chicken breasts

3 avocados

4 slices of munster cheese

2 tbs. olive oil

1 tsp. sea salt

1/2 tsp. black pepper

1/8 tsp. red pepper flakes

2 tbs. onion (chopped)

Marinade Ingredients:

1 cup of olive oil

1/2 cup balsamic vinegar

4 cloves of garlic (chopped)

Directions:

1. Put chicken breasts in a Ziploc bag with marinade. Marinate for a least 2 hours. You can do it over night.

Preheat oven to 400 degrees.

2. In a deep baking pan, brush 2 tbs. of olive oil. Place chicken breasts and begin to bake in oven.

3. While chicken bakes, mix avocado with salt, black pepper, red pepper flakes and onion.

4. After 35 minutes (or until chicken is white and cooked on the inside) remove chicken from oven.

5. Put 2 tbs. of guacamole on top of each chicken breast and a slice of munster cheese. Return chicken to oven for 3 minutes, until cheese melts. 

Serve hot.
