Lemon Thyme Shrimp With Roasted Garlic Chickpeas




1 1/2 lb. uncooked medium shrimp (tail removed)

1 cup dry white wine

1 large lemon (juiced)

1 tsp. sea salt

2 tsp. fresh thyme

2 cloves of garlic (chopped)

1 can (10 oz.) chickpeas (drained)

olive oil


Preheat oven to 350 degrees.

1. In a small baking dish, put chickpeas, 1 clove of chopped garlic, 2 tbs. of olive oil and a pinch of sea salt. Mix together and put in oven for 5 minutes.

2. Meanwhile in a large skillet, put remaining garlic and 2 tbs. of olive oil. Sauté garlic for about a minute and then add shrimp. Add white wine about 2 minutes into cooking shrimp. Turn shrimp over.

3. Squeeze lemon on top of shrimp. Sprinkle sea salt and fresh thyme.

4. Remove chickpeas from oven and put on top of shrimp. Mix together.

5. Total time of cooking shrimp should be about 8-10 minutes. Most of the wine should have evaporated.

Serve hot.


Cranberry Chickpea Penne




1 lb. pasta (your choice) *ziti goes well with this recipe

1 can (10 oz.) chickpeas (drained and rinsed)

1 cup fresh edamame

1 cup dried cranberries

2 cloves of garlic (chopped)

2 tbsp. olive oil plus another 1 tbsp.

2 tbsp. red wine vinegar

1 tsp. sea salt

1/2 tsp. black pepper

1 tsp. sugar


1. Boil pasta to your desired consistency. (drain well when done)

2. Meanwhile, In a large skillet, put 2 tbsp. olive oil. Brown garlic for a minute and then add chick peas, edamame, cranberries, sea salt and black pepper.

3. Stir well. Cook for about 5 minutes. Then add 1 tbsp. of olive oil, red wine vinegar and sugar. Stir.

4. Cook for an additional minute and pour over pasta.

*Sprinkle some parmesan cheese on top.

Chickpea Patties




1 (15 oz.) can of chickpeas (rinsed and drained)

2 carrots (minced)

1 red pepper (minced)

1/2 small red onion (minced)

2 celery stalks (minced)

1 tbs. of olive oil

1 cup of bread crumbs

2 egg whites (beaten)

salt and pepper


Preheat oven to 350 degrees.

1. In a bowl, put chickpeas, carrots, red pepper, onion and celery. Add a pinch of salt and pepper and 1 tbs. of olive oil. Mix well.

2. With a potato masher, mash the mixture lightly. Add egg whites and mix. Add bread crumbs. Mix thoroughly. Depending on the size you desire, take 2 tbs. of mixture and form into patties.

3. Grease a cookie sheet with a a tsp. of olive oil. Place patties on cookie sheet. Bake in oven for 20 minutes. (Turn patties over after 10 minutes.)

Serve warm. Makes 6-8 patties.  You can serve with a little lemon or with tahini sauce.
