Red White and Blue Tarts



2 boxes mini tart shells

1 cup fresh blueberries (rinsed and drained)

1 cup fresh raspberries (rinsed and drained)

1 can of whipped cream


1. Fill each tart with whipped cream.

2. Add a few raspberries and blueberries on top.

Serve chilled.


Mr. C.’s Fourth of July Pie


5 cups of fresh peaches (peeled and sliced)

1 pint of fresh blueberries (rinsed and drained) all stems removed

3/4 cup granulated sugar

1 tsp. vanilla extract

2 1/2 tsp. cornstarch

Pie Crust Ingredients:

2 1/2 cups all purpose flour

2 sticks of very cold unsalted butter (cut into 1/4 inch pieces)

1 tsp. sugar

1 tsp. salt

7 tbs. ice water

Egg Wash and Sugar Ingredients:

1 large egg white (beaten)

1 tsp. water

1-2 tbs. coarse sugar (for sprinkling)


Preheat oven to 400 degrees.

1. In a food processor, mix all dry pie crust ingredients and then add cold butter. Pulse 6 to 8 times. Flour should be course. Slowly add a tbs. of iced water at a time. Pulse slowly. Dough should become more firm. Pinch dough and it should be firm. Add a drop more water if it’s not firm.

2. Roll dough on a floured surface. Roll into a ball and cut in half.

3. In a large bowl, put peaches, blueberries, sugar, cornstarch and vanilla extract. Mix together.

4. Take half of the dough and roll out. Place dough in 9 inch pie pan.

5. Take fruit filling and put in pan.

6. Take second half of dough and roll out. Cut dough into 1 inch strips.

7. Crisscross strips of dough on top of pie. (See photo) Crimp dough around entire pie.

8. In a little bowl, mix egg white and water.

9. Brush egg wash on top of pie thoroughly. Sprinkle coarse sugar on top of dough strips.

10. Place pie pan on a cookie sheet. (You don’t want juice of pie dripping in stove.)

11. Bake in oven for about 30 minutes. Reduce heat to 350 degrees and bake for another 20 minutes. Pie crust should be golden brown and fruit should be bubbly when done.


Homemade Blueberry Muffins


1 1/2 cups all-purpose flour

3/4 cup white sugar

1/2 teaspoon salt

2 teaspoons baking powder

1/3 cup vegetable oil

1 egg

1/3 cup milk

1 cup fresh blueberries

Crumb Ingredients:

1/2 cup white sugar

1/3 cup all-purpose flour

1/4 cup butter (cubed)

1 1/2 teaspoons ground cinnamon


  1. Preheat oven to 400 degrees. Grease muffin cups or line with muffin liners.
  2. Combine flour, sugar, flour and salt. Place vegetable oil into a one cup measuring cup. Add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
  3.  To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
  4.  Bake for 20 to 25 minutes in the preheated oven, or until done.

Custard Fruit Tart

1 ( 9 inch) tart shell
1 cup fresh blackberries
1 cup fresh raspberries
1 cup fresh blueberries
3 kiwis (sliced)
2 slices mango
1 strawberry (for the center) *optional
3 boxes Jello-Cook and Serve Custard (you can make your own custard, this is easier)
1. Follow directions on custard boxes and make custard. Let cool in refrigerator. (at least 4 hours)
2. Take tart shell. Fill evenly with creamy cooled custard.
3. Decorate top of custard with a variety of fruit. (see photo)
4. Return to refrigerator, so it sets. Keep refrigerator.
Serve cold.
*You can use any fruit toppings of choice. Also, some people like it with vanilla pudding instead of custard.

A Loaf Of Multigrain Sliced Bread (Toasted)

1 (8oz.) cream cheese

2 ripe bananas (sliced thin)

1 cup fresh blueberries

salmon lox

1 small red onion (sliced)


  1. On toasted bread, spread some cream cheese.
  2. On one slice of bread put sliced banana and blueberries.
  3. On one slice of bread put lox and red onion.  (see photos)

Cooking With Mr. C.’s Grilled Blueberry Shrimp



1 lb. medium size shrimp (tail left on)

2 tbs. olive oil

4 tbs. red wine vinegar

2 tbs. fresh lemon juice

1 cup blueberry juice

1/4 cup fresh blueberries

1 tsp. sea salt


1. Mix all ingredients (Except Shrimp) in a food processor and then pour in a Ziploc bag.

2. Add uncooked shrimp into Ziploc bag.

3. Let marinate overnight in refrigerator. (Overnight is best, if you don’t have that much time, at least 3-4 hours.)

4. Grill shrimp on each side for about 2 minutes. Sprinkle with a little sea salt while grilling.

Serve warm.
