Italian Salad

Ingredients:
1 lb. mixed greens (rinsed and drained well)
1 cup cherry tomatoes
1 cup of red roasted peppers (cut in thin slices)
1 cup fresh mozzarella (grated)
1/2 cup black olives (sliced)
1 cup shredded carrots
1 cup artichoke hearts
Directions:
1. On a large platter, place mixed greens. Put all ingredients on top. (See photo.)
2. Serve with a simple Italian dressing. Mix well and serve.

Artichoke Salad

Ingredients:

2 cans artichoke hearts (drained) cut in half

1 can of hearts of palm (drained) cut in half

1 small red onion (sliced)

1 cup cherry tomatoes

1 cup fresh snap peas

1/2 cup of small pitted black olives (drained) (optional)

2 tbs. olive oil

2 tbs. red wine vinegar

1/4 tsp. sea salt

1/4 tsp. black pepper

Directions:

1. In a large bowl, mix all ingredients. Mix well. Refrigerate for an hour and serve.

It’s simple and delicious. Some people like black olives in it and some don’t. It all depends on your taste.

Salmon Burger Salad

Ingredients:
1 lb. mixed greens (rinsed and drained well)
1 lb. ground salmon (made into 4 small burgers)
1/4 sweet onion (minced)
1/4 cup plain bread crumbs
1 tsp. sea salt
1 tsp. black pepper
4 tbsp. fresh lemon juice
olive oil
1 cup of cherry tomatoes
1/2 cup black olives sliced
Directions:
1. In a large bowl, mix ground salmon, bread crumbs, onion, lemon juice, sea salt and black pepper. Form into burgers.
2. In a large skillet, put 2 tbsp. of olive oil. Cook salmon burgers for about 8-10 minutes. (about 4 minutes on each side) Let drain on paper towel.
3. In a large bowl put mixed greens, cherry tomatoes and black olives. (You can sprinkle a pinch of sea salt on top.)
*You can cut up salmon burgers and add on top or you can serve whole burgers on individual salads. (Serves 4)
Serve with a dressing of your choice. A “citrus” dressing goes well with it.

Ingredients:

5 red peppers (cut in half, seeds removed)

2 cups flavored bread crumbs

1 can (6 oz.) pitted black olives (drained and chopped)

1 cup pignoli nuts

olive oil (1/2 cup plus extra)

2 cloves of garlic (chopped)

lemons (optional)

Directions:

Preheat oven to 400 degrees.

  1. In a large bowl, mix bread crumbs, black olives, pignoli nuts and garlic. Mix well. Add 1/2 cup of oil. Stir. (If it’s a little dry, add a little more olive oil.)
  2. In a large baking pan, brush a little olive oil on the bottom of the pan.
  3. Stuff each pepper with bread crumb mixture.
  4. Cover pan with aluminum foil and make a hole on top. Bake in oven for 30 minutes.
  5. Remove tin foil and bake for an additional 15 minutes. (You want peppers to be tender and bread crumbs a little crunchy.)                                                                                                                                    * Optional: You can squeeze a little lemon on top when serving.

Ingredients:
6 chicken cutlets
1 lb. fresh spinach
1 cup cherry tomatoes (cut in half)
1 cup black olives (pits removed and sliced)
1 clove of garlic (chopped)
3 tbs. olive oil plus 2 tbs.
2 tbs. balsamic vinegar
1 tsp. sea salt
1 tsp. black pepper
Directions:
1. In a Ziploc bag, add chicken cutlets, olive oil, balsamic vinegar, sea salt and black pepper. Let marinate in refrigerator for at least one hour.
2. Grill chicken cutlets on both sides until done. Keep warm.
3. In a large skillet, add 2 tbs. of olive oil. Add garlic. Let brown for a minute. Add tomatoes and spinach. Sprinkle a pinch of sea salt. Stir. Add cooked cutlets to the pan.
4. Cook for an additional 3 minutes. (heat through)
Serve hot.

Balsamic Chicken and Vegetables

Ingredients:

8 chicken cutlets  (thin slices)

1 cup of broccoli (boiled for 5 minutes and drained well)

1 red bell pepper (sliced and seeds removed)

1 yellow bell pepper (sliced and seeds removed)

1 small onion (sliced)

1 cup of black olives (without pits)

 1 cup of bread crumbs

2 egg whites beaten

2 cloves of garlic (chopped)

olive oil

4 tbs. balsamic vinegar

salt and pepper

Directions:

1. Mix cutlets in egg whites and then in bread crumbs. Coat each side well with crumbs.

2. In a large skillet, add 2 tbs. of olive oil. Heat oil and fry cutlets on both sides until browned. (remove and let dry on paper towels.

3. In another skillet, add 2 tbs. of olive oil. Brown garlic and add broccoli, peppers and red onion. Cook for 5 minutes. Add black olives, and a pinch of salt and pepper. Stir well.

4. Once cooled, cut chicken cutlets into strips.

5. In a large baking dish add chicken cutlets and vegetables. 

6. In a small bowl add 1 tbs. of olive oil and 4 tbs. of balsamic vinegar. Mix well. Pour over chicken and vegetables.

7. Bake in oven for 10 minutes and serve hot.

 

Southwestern Wrap

Ingredeints:

2 grilled chicken breasts (sliced) salt and pepper chicken breasts

8 thin slices of cheddar cheese

2 cups cooked seasoned rice (brown rice w/garlic, salt and pepper is an option)

2 cups shredded lettuce

1 cup of sliced black olives

salsa

wraps

Directions:

1. Open a wrap and lie flat on a dish.

2. Spread a tablespoon of salsa on top. Spread a layer of rice, topped with some black olives.

3. Add shredded lettuce. Put a few chicken slices on top.

4. Put a slice of cheddar cheese on top.

5. Roll wrap and fold in edges. Cut wrap in half and serve.

Makes 4 wraps. (8 halves)
