Have You “Liked” “Cooking With Mr. C.” on Facebook?

Ingredients:
2 avocados (sliced)
1 (10 oz.) can of chick peas (drained and rinsed)
1 (10 oz.) can of corn (drained)
1 (10 oz.) can of red kidney beans (rinsed and drained)
1 cup of cherry tomatoes
1 green bell pepper (sliced)
1 red bell pepper (sliced)
1 tbsp. fresh parsley (chopped)
3 tbsp. olive oil
2 tbsp. red wine vinegar
2 tsp. sea salt
1 tsp. black pepper
Directions:
1. In a large bowl add all ingredients, except olive oil, vinegar, salt and pepper.
2. Refrigerate for at least 1 hour.
3. Now add olive oil, vinegar, salt and pepper. Mix well and serve.

Homemade Spring Rolls

Ingredients:

Edible Rice Paper (You can use romaine lettuce as your wrap.)

Romaine Lettuce (shredded)

2 large avocados sliced

1 cup sliced carrots (paper thin)

1 cup sliced cucumber (paper thin)

1 cup large boiled shrimp (sliced) (see photo)

Directions:

  1. Open a piece of rice paper or a romaine lettuce leaf. Add carrots, cucumber, avocado, romaine lettuce and sliced shrimp.
  2. Roll up. (See photo)      *Serve with your favorite Asian dipping sauce.

 

Ingredients:

Sweet Potatoes

Salsa

Sour Cream

Avocado (Sliced)

Directions:

  1. Bake sweet potatoes in a 400 degree oven for about one hour. (You want potatoes soft.)
  2. Top potatoes with salsa, sour cream and avocado.

Mussels and Avocado Salad

Ingredients:

3 lbs. mussels

3 avocados (sliced)

1/2 cup red onion (sliced)

1 bulb of garlic (roasted)

1/4 cup olive oil

sea salt and black pepper

Directions:

  1. In a large pot, put 1 cup of water. Add cleaned mussels and cook on a low heat. (about 8 minutes) You want the mussels to open and cook.
  2. Drain well. Let cool a few minutes and then remove mussels from shells.
  3. Slice avocados to bite size pieces.
  4. Slice red onion.
  5. Put all ingredients in a serving bowl. Cover and refrigerate.
  6. Preheat oven to 350 degrees. Take a piece of aluminum foil. Put garlic bulb on top. Drizzle a tbsp of olive oil on top of bulb. Wrap up and cook in oven for about 30 minutes.
  7. Let cool and remove garlic from bulb.
  8. In a food processor, put garlic, 1/4 cup olive oil and a pinch of sea salt and black pepper. Pulsate for 20 seconds.
  9. Pour dressing over mussels and serve.

Ingredients:

1/2 lb. turkey (8-10 slices)

8 pieces cooked bacon

2 avocados (sliced)

2 tomatoes (sliced thin)

8 slices multigrain bread (toasted)

mayonnaise (optional)

Directions:

On each sandwich (toasted bread) place 2 slices of turkey, 2 strips of cooked bacon, sliced tomato and avocado. (You can put mayonnaise on the sandwich, if you like.)
Makes 4 sandwiches.

Fried Eggs In An Avocado

Ingredients:
1 avocado (cut in half)
2 fried eggs (fried in 1 tbsp. of butter)
tomatoes (optional)
sea salt
Directions:
On a plate, place halved avocados.
Put a fried egg on top of each halve.
Sprinkle with sea salt.
Garnish with sliced tomatoes. *optional

Grilled Stacked Tomatoes

Ingredeints:
3 large beefsteak tomatoes (cut 4 slices out of each tomato)
3 ripe avocados (sliced)
4 slices of bacon
2 ears of corn
salt and pepper
1/2 tsp fresh parsley (chopped)
olive oil
balsamic vinegar
Directions:
1. Salt and pepper ears of corn. Brush with a little olive oil. Grill corn until it’s a little browned. Remove and let cool. When cooled, shuck the corn off the cob and leave to the side.
2. In a large skillet, cook bacon until crispy and remove. Let dry on a paper towel.
3. Brush olive oil on each tomato slice. Sprinkle a pinch of salt and pepper on each side. Grill tomatoes on each side for about 5 minutes. (You want them a little tender, not soft.) Remove tomatoes from grill when done.
4. To stack tomatoes, take a tomato slice and put an avocado slice on top. Put another tomato slice on top. Then put an avocado slice and then top it with a tomato slice.
5. On the top, put a slice of bacon and a slice of avocado. Put 2 tbs. of corn on top.
6. In a small bowl, mix 2 tbs. of olive oil, 1 tbs. of balsamic vinegar and parsley. Stir. Drizzle a little over tomato and serve.
Makes four stacks.

Mr. C.’s Crazy Tuna Stuffed Avocados

Note: When I first served this dish, a guest asked, “What’s in it? After listing all the ingredients, my guest explained, “That’s Crazy”, hence the name “Mr. C’s Crazy Tuna”.

Ingredients:

1 large can (12 oz.) of tuna in olive oil. (chop up tuna)

2 tbsp. capers

3 tbsp. sweet pickle relish (* I buy a brand where the relish is a little more crunchy, than soft.)

3 large slices of sweet jarred peppers (minced)

1/4 cup of chopped kalamata olives (chopped)

2 hard boiled eggs (chopped)

2 tbsp. mayonnaise

1 tbsp. Dijon Mustard

a pinch of sea salt and black pepper

4 large avocados, cut in halves for stuffing

Directions:

  1. In a very large bowl, mix all ingredients, except the avocados.
  2. Stuff each avocado halve.

*If you don’t want to stuff avocados, serve with crusty bread or a sesame cracker.

Ingredients:

4 large tomatoes (sliced)

8 slices of muenster cheese

2 large avocados (sliced)

parmesan cheese

2 tbsp. olive oil

Directions:

Preheat oven to 400 degrees,

1. In a baking pan, put 2 tbsp. of olive oil.

2. Put a slice of tomato , avocado on top, and then top with a slice of muster cheese.

3. Sprinkle parmesan cheese on top.

4. Bake in oven for 7 minutes or until cheese is melted.

Santa Fe Salad

Ingredients:

1 head of romaine lettuce (rinsed and drained well) *chopped

3 chicken cutlets grilled (cut into small bite size pieces)

1 cup canned black beans (rinsed and drained)

2 avocados (cut into small pieces)

1/2 cup red onions (chopped)

1 cup cherry tomatoes (chopped)

1 cup sharp cheddar cheese (cut into small pieces)

*Tortilla Chips optional.

Directions:

1. In a large bowl put romaine lettuce.

2. Top with the remaining ingredients.

*Best served with a Ranch dressing. Serve with Tortilla Chips.
