New Year’s Avocado Bean Salad

Ingredients:
2 avocados (sliced)
1 (10 oz.) can of chick peas (drained and rinsed)
1 (10 oz.) can of corn (drained)
1 (10 oz.) can of red kidney beans (rinsed and drained)
1 cup of cherry tomatoes
1 green bell pepper (sliced)
1 red bell pepper (sliced)
1 tbsp. fresh parsley (chopped)
3 tbsp. olive oil
2 tbsp. red wine vinegar
2 tsp. sea salt
1 tsp. black pepper
Directions:
1. In a large bowl add all ingredients, except olive oil, vinegar, salt and pepper.
2. Refrigerate for at least 1 hour.
3. After an hour, add olive oil, vinegar, salt and pepper. Mix well and serve.

Mr. C.’s Stuffed Tuna Avocados

Ingredients:

1 large can (12 oz.) of tuna in olive oil. (chop up tuna)

2 tbsp. capers

3 tbsp. sweet pickle relish (* I buy a brand where the relish is a little more crunchy, than soft.)

3 large slices of sweet jarred peppers (minced)

1/4 cup of chopped kalamata olives (chopped)

2 hard boiled eggs (chopped)

2 tbsp. mayonnaise

1 tbsp. Dijon Mustard

a pinch of sea salt and black pepper

4 large avocados, cut in halves for stuffing

Directions:

  1. In a very large bowl, mix all ingredients, except the avocados.
  2. Stuff each avocado halve.

*If you don’t want to stuff avocados, serve with crusty bread or a sesame cracker.

 

Grilled Lime Shrimp Salad

Ingredients:
1 lb. medium shrimp (cleaned and tail left on)
1 lb. mixed greens
1 cup orange slices (cut into bite size pieces)
1 cup cherry tomatoes (cut in half)
2 avocados (sliced)
1 tsp. sea salt
2 limes (juiced)
1 tbsp. olive oil
4 tbsp. chopped cilantro
Directions:
1. In a Ziploc bag, put raw shrimp, lime juice, olive oil, cilantro and sea salt. *Let marinate overnight if possible.
2. Grill shrimp for 5-6 minutes. (Turn over half way.)
3. In a large bowl, put mixed greens. On top put orange slices, cherry tomatoes and avocados. Place shrimp on top.
*Serve with a vinaigrette dressing. *A honey vinaigrette is a good choice.

Turkey, Bacon, Tomato and Avocado Sandwich

Ingredients:

1/2 lb. turkey (8-10 slices)

8 pieces cooked bacon

2 avocados (sliced)

2 tomatoes (sliced thin)

8 slices multigrain bread (toasted)

mayonnaise (optional)

Directions:

On each sandwich (toasted bread) place 2 slices of turkey, 2 strips of cooked bacon, sliced tomato and avocado. (You can put mayonnaise on the sandwich, if you like.)
Makes 4 sandwiches.

Labor Day Grilled Chicken Pesto Avocado Burger

Ingredients:

1 lb. ground chicken

2 tsp. sea salt

1 tsp. black pepper

1 cup fresh basil (packed into cup)

1 clove of garlic

1/4 cup pignoli nuts

1/4 cup parmesan cheese

3 tbsp. olive oil

2 avocados (sliced)

a bunch of red leaf lettuce (rinsed, drained and torn)

Directions:

1. In a food processor, put basil, garlic, pignoli nuts, parmesan cheese and olive oil. Pulse until smooth. If you need a little more oil, add a drop more. Leave pesto to the side.

2. Mix ground chicken with sea salt and black pepper. Form into 4 burgers.

3. Grill burgers for at least 10 minutes. (Turn over after 5 minutes.)

4. On ciabatta bread or a roll, put a tbsp. of pesto on inside of roll. Place burger. Put lettuce and slice avocado on top.

*Serve with french fries. (Optional)

Blue Cheese Burger With Avocado And Bacon

Ingredients:

1 lb. chopped beef (made into 4 patties)

2 ripe avocados (sliced into 12 pieces)

8 strips of cooked bacon

4 tbsp. blue cheese dressing (Marie’s Dressing works well.)

Directions:

1. Cook burger to your desired taste.

2. When burger is done, place on a grilled bun.

3. Add 2 slices of bacon and 3 slices of avocado on top.

4. Put a tbsp. of blue cheese dressing on top.

(Serving with fries is optional.)

Makes 4 burgers.

Homemade Spring Rolls

Ingredients:

Edible Rice Paper (You can use romaine lettuce as your wrap.)

Romaine Lettuce (shredded)

2 large avocados sliced

1 cup sliced carrots (paper thin)

1 cup sliced cucumber (paper thin)

1 cup large boiled shrimp (sliced) (see photo)

Directions:

  1. Open a piece of rice paper or a romaine lettuce leaf. Add carrots, cucumber, avocado, romaine lettuce and sliced shrimp.
  2. Roll up. (See photo)      *Serve with your favorite Asian dipping sauce.
