Shrimp and Scallop Pizza

Ingredients:
Focaccia or Pizza Bread
1/2 lb. shrimp (uncooked)
1/2 lb. bay scallops (uncooked)
3 large red onions (sliced)
1 large vidalia onion (sliced)
2 cups fresh arugula
1 tsp. sea salt
1/2 tsp. black pepper
3 tbsp. balsamic oil
2 tsp. white sugar
olive oil
Directions:
1. In a skillet, put 1 tbsp. olive oil. Cook shrimp and scallops. Sprinkle with sea salt and black pepper. Turn shrimp and scallops while cooking. Should take no more than 5 minutes to cook. Set to the side.
2. In a skillet, put 2 tbsp. of olive oil. Cook sliced onions. Stir frequently. When they are tender, add balsamic vinegar and sugar. Stir together. Cook an additional 2 minutes. Set onions to the side. (If it’s to oily, drain some of the excess.)
3.Preheat oven to 350 degrees. Brush a little olive oil of focaccia/pizza bread. Place on a baking sheet and place in oven, just for about 5 minutes. You want the bread to begin to get crisp.
4. Remove bread from oven. Spread cooked onions evenly on top Scatter fresh arugula on top. Place cooked shrimp and scallops evenly on top. (If the scallops are large, you can cut them into pieces.)
5.Return to the oven for about 6-8 minutes.
*Serve hot and crispy.

Ingredients:

1  1/2 lbs. medium shrimp (cleaned and tail removed)

2 lbs. fresh arugula (rinsed and drained)

1 (10 oz.) can lentils (rinsed and drained)

2 cloves of garlic (chopped)

olive oil

sea salt and black pepper

1 lemon (juiced)

1/2 cup  dry white wine

Directions:

1. In a large skillet, add garlic and 2 tbs. of olive oil. Sauté shrimp for five minutes and set to the side.

2. In the same skillet, add arugula and lentils. Add about 1 tbs. of olive oil. Cook on a medium heat for about 4 minutes. (stir occasionally)

3. Add shrimp back to the skillet. Sprinkle a pinch of sea salt and black pepper. Add lemon juice and white wine. Stir. Raise heat to high for 3 minutes and then serve.

Serve hot

*Optional: You can add a cup of chopped walnuts in step 2, if you like.

Ingredients:

1 lb. fresh arugula (rinsed and drained)

1 cup shredded carrots

1 cup sliced mushrooms

2 avocados cut into pieces

1 tsp. sea salt

1/2 tsp. black pepper

Dressing Ingredients:

1 tbsp. chopped garlic (3 medium garlic cloves)
2/3 cup plain fat-free Greek yogurt
1/3 cup extra-virgin olive oil
1/4 cup fresh lemon juice (from 2 lemons)
1/4 cup crumbled feta cheese
1/2 tsp. sea salt

Directions:

1. Add all vegetables to one bowl.

2. In another bowl, mix dressing ingredients. (You may want to make the dressing an hour before serving)

Arugula Tomato Salad With Fried Feta

Ingredients:

4 tomatoes (sliced)

1 small red onion (thinly sliced)

2 cups fresh arugula (rinsed/dried)

1 small can pitted black olives (drained)

8 oz. feta cheese (cut into cubes)

1 egg

1 cup seasoned bread crumbs

2 tbsp. olive oil

Dressing:

3 tbsp. olive oil

1/2 lemon (juiced)

2 tsp. chopped fresh oregano

1 1/2 tbsp. honey

pinch of black pepper

Directions:

  1. Dip feta cheese cubes into egg and then bread crumbs.
  2. In a skillet, put 2 tbsp. olive oil. When heated, add feta cheese. Cook on both sides for 2 minutes each and remove from skillet.
  3. On a large platter, spread out arugula. Put tomatoes, red onions and olives on top. (See photo.)
  4. Mix salad dressing ingredients. Pour dressing over salad.
  5. Top salad with fried feta.

Garlic Crouton Scallops Over Arugula

Ingredients:
2 lbs. sea scallops
1 lb. fresh arugula (rinsed and drained well)
1 bag (10 oz.) 0f garlic croutons (can be a larger bag)
2 large lemons
olive oil
1 clove of garlic (chopped)
sea salt and black pepper
Directions:
Preheat oven to 350 degrees.
In a food processor add croutons. Add a tbsp of olive oil and juice of one lemon. Chop in food processor.
In a baking dish, coat the bottom with a tbsp. of olive oil. Place scallops in dish. Sprinkle garlic crouton crumbs on top. Cover all of them.
Squeeze the juice of one lemon on top. Bake in oven for about 10-12 minutes. *You want the scallops cooked, but not dried out.
In a large skillet, put a tbsp. of olive oil and garlic. Let garlic cook for a minute. Add arugula. Sprinkle sea salt and black pepper. Stir as it will cook quickly. (about 3 minutes)
Plate arugula and place scallops on top.

Shrimp and Feta Horderves

A quick and easy horderve for any party.
Ingredients:
12 large shrimp (boiled, tails removed) *chopped
1/2 cup fresh arugula (chopped)
1/4 cup feta cheese (chopped)
1/2 cup grape tomatoes (chopped)
2 tbs. olive oil
1/2 tsp. sea salt
2 dozen mini filo shells (room temperature)
Directions:
1. In a large bowl, mix all ingredients except filo shells.
2. Fill shells with mixture. (see photo)

Ingredients:

4 skinless boneless chicken breasts (1/4 in. thick)

8 slices munster cheese

1/2 cup sundried tomatoes (in olive oil)

1 cup fresh arugula (rinsed and drained well)

4 hero breads

sea salt and black pepper

Directions:

1. On a grill with a little olive oil, grill chicken breasts. Sprinkle sea salt and black pepper. Cook on both sides. Cook for about 8 minutes. (depends on the thickness of chicken) *Chicken should be well cooked.

Preheat oven to 350 degrees.

2. When chicken is cooked, place chicken on a baking pan. Place 2 slices of munster cheese on each chicken breast. Put in oven for about 5 minutes, until cheese is melted.

3. Slice hero bread. (see photo)

4. Drizzle a little olive oil on bread. Put some arugula on bread. Place chicken breast on bread and top with sundried tomatoes. (See photo.)

Ingredients:
8 chicken cutlets
2 cups fresh arugula
1 lb. piece fresh mozzarella ( 8 thin slices)
4 large vine tomatoes (16 thin slices)
4 tbs. olive oil
4 tbs. balsamic vinegar
2 tsp. sea salt
Directions:
1. In a Ziploc bag, put chicken cutlets, olive oil and balsamic vinegar. Refrigerate for 2 hours.
2. After 2 hours, grill cutlets in a skillet with a tbs. of olive oil. Sprinkle salt on both sides. Cook on both sides for about 3 minutes each. (Depends on the thickness of cutlets.) Make sure chicken is well cooked.
Preheat oven to 400 degrees.
3. In a large baking pan, put a little olive oil to coat the bottom.
4. Put chicken cutlet, arugula, a slice of mozzarella and 2 slices of tomatoes on top.
5. Bake in oven for 10 minutes, until cheese melts.
Serve hot. Serves 4. (2 cutlets each)

Ingredients:

2 lbs. fresh arugula (rinsed and drained)

1 (10 oz. can) white beans (rinsed and drained)

1 cup of sundried tomatoes in oil (chopped)

1 cup walnuts (chopped)

3 tbs. olive oil

2 tsp. sea salt

1 tsp. black pepper

4 tbs. grated parmesan cheese (optional)

Directions:

1. In a large skillet, put 3 tbs. of olive oil. Begin to saute arugula.

2. After about 3 minutes, add white beans, sundried tomatoes and walnuts.

3. Add sea salt, pepper and 1 tbs. olive oil, if needed. Stir well.

4. Cook for another 2 minutes and serve.

*You can sprinkle parmesan cheese on top when serving.
