Shrimp and Sweet Red Peppers

Ingredients:

1 lb. uncooked medium shrimp (tail removed)

1 jar (24 oz.) B &G Sweet Red Peppers (sliced)

1 cup leeks (chopped)

1 tbsp. olive oil

sea salt and black pepper

Directions:

  1. Boil shrimp for 5 minutes. (until pink) Drain well.
  2. In a large skillet, put olive oil. Cook leeks for about 3 minutes.
  3. Add peppers to skillet. Stir together. Cook for 2 minutes.
  4. Add boiled shrimp.
  5. Raise heat and keep stirring for about 4 minutes.
  6. Sprinkle with a pinch of sea salt and black pepper.

*Serve hot. It’s also delicious cold.

Ingredients:

1 (10 oz.) bag of cheese tortellini

2 apples (cut into slices)

1 1/2 cups sliced strawberries

2 cups lettuce (shredded)

1/4 cup scallions (chopped) *optional

1/2 cup toasted pine nuts

Directions:

1. Boil tortellini to desired taste. (let cool)

2. On a platter, place lettuce. Put all other ingredients on top. (View photo.)

3. Drizzle your favorite vinaigrette dressing on top and serve.
