4 large slices of sole 

1/2 cup plain bread crumbs

1/4 pumpkin seeds

2 cloves of garlic (chopped)

3 tbsp.olive oil

1 tsp. sea salt

1/2 tsp. black pepper


Preheat oven to 400 degrees.

1. In a bowl, mix bread crumbs, pumpkin seeds, garlic, olive oil, salt and pepper.

2. In a deep baking pan, put a tbsp. of olive oil. Brush oil evenly on bottom of baking pan. 

3. Place slices of sole in baking pan and evenly put bread crumb mixture on top of each slice. 

4. Bake in oven for 15-18 minutes.  Serve hot.
