1 1/2 cups sugar
2 cups mashed cooked sweet potatoes
2 tbs. flour
1 (5 ounce) can evaporated milk
1 egg (beaten)
1 tsp. vanilla
1 (9 inch) unbaked pie shell
Preheat oven to 375 degrees.
1. In a bowl, put sugar, flour, milk, egg and vanilla.
2. Stir in the sweet potatoes. Mix well.
3. Pour into pie shell. Cover very loosely with foil.
5. Bake for 45 minutes.
6. Remove foil. Bake 15 minutes longer or until crust is golden brown. Use a toothpick to test center of pie. Toothpick should come out clean.
