3 large zucchini (thinly sliced strips)
1 cup fresh basil (washed and dried)
1 clove of garlic (chopped)
1/4 cup grated cheese
salt and pepper
1. In a food processor, add basil, garlic, grated cheese, a pinch of salt and pepper and 3 tbs. of olive oil. Mix well in food processor until smooth. Add extra olive oil if needed.
2. In a large bowl put zucchini slices and pour pesto mixture on top. Stir gently and make sure all zucchini is coated. If dry, you can add another tbs. of olive oil.
3. Cooking Options:
1. In a preheated oven of 400 degrees, you can bake zucchini in the oven for about 15 minutes. Turn zucchini over half way through. Zucchini should be tender. Or
2. On a barbeque grill, grill zucchini on each side for about 6 minutes each. You can brush a little olive oil on zucchini while grilling.
Serve warm or cold.
