6 soft shell crabs (cleaned) *seafood stores will clean them for you (give an extra cold water rinse and dry on paper towels)

4 cloves of garlic (chopped)

1 cup white wine (choose a good one)

4 tbs. of olive oil

salt and pepper


1. In a large skillet, put olive oil and garlic. When garlic browns, add soft shell crabs. Cook on one side for 2 minutes and turn over.

2. Add wine and cook other side of soft shell crab for another 2 minutes.

3. Add a pinch of salt and pepper. Turn for another minute and then remove.

Serve hot with fresh lemon.
